Polvilho Azedo 500g Yoki
Sour cassava starch is used to make delicious crisps called 'Polvilho Biscuits', found throughout Brazil.
It is also used in pão de queijo – traditional and much-loved cheese rolls.
Not to be confused with cassava flour, this starch is a powder with a consistency similar to potato flour,
made from cassava (also called yucca or cassava).
In Brazil, cassava starch comes in two varieties: sweet starch is made from fresh cassava juice,
and acidic starch is a byproduct obtained from fermented cassava juice.
Sour cassava starch is a gluten-free product.
YOKI was founded in the 1980s by Japanese businessman and immigrant Yoshizo Kitano.
He wanted to realize his vision of improving convenience and safety in the Brazilian food market.
