Sweet cassava starch is used to make pão de queijo—traditional and beloved cheese rolls—as well as crepioca.
It can be hydrated to create tapioca, thicken sauces or added to various dishes.
Cassava starch is a powder with a consistency similar to potato flour, made from cassava
(also known as yucca or cassava). In Brazil, cassava starch comes in two varieties:
sweet starch, made from fresh cassava juice, and sour starch, made from fermented cassava juice.
YOKI was founded in the 1980s by Japanese businessman and immigrant Yoshizo Kitano.
He wanted to realize his vision of improving convenience and safety in the Brazilian food market.
