Description
Goiabada cascão is a traditional Brazilian, thick sweet marmalade made from pink guava, which contains pieces of fruit and peel,
unlike smooth goiabada (marmalade). The traditional version of "cascão" is unique because it retains its texture, providing a more pronounced fruity flavor and
more vitamin C (most of which is found in the peel). Its consistency is thick, easily sliced, with visible pieces of fruit and peel, and its taste is intensely fruity and sweet. Guava is a rich source of vitamin C—it contains 3 to 6 times more than oranges and almost 30 times more than bananas.
A significant portion of the vitamin C is found in the peel of the guava. It can be eaten like chocolate in pieces, classically served with cheeses such as mozzarella or fresh Queijo de Minas cheese
(similar to the good Korycin cheese). The combination with the cheese is called Romeu e Julieta. It is also used as a filling for cookies, roulades, pão de Queijo, a cornbread filling (bolo de fubá)
and as a topping for cheesecakes and other baked goods.
