From this white dried corn, you can prepare a sweet version called "canjica" (adding coconut milk, sweetened condensed milk
and cinnamon, among other ingredients) or a savory version.
The sweet version is one of the traditional dishes prepared for "Fest Junina" – the Brazilian Festa Junina
was celebrated as early as the Portuguese colonization of Brazil. It was, and still is, a holiday honoring St. Anthony
St. John, and St. Peter, and also celebrates the end of summer and the beginning of the harvest.
June, the month during which Festa Junina always takes place, is the corn harvest month, so most sweet and savory
dishes prepared for this holiday are made with corn. These include pamonha, canjica, boiled corn on the cob, and corn cake.
In Brazil, you can even try corn-flavored ice cream.
